Miles Kirby is Caravan’s executive chef and an owner of the business. He was previously head chef at The Providores and Tapa Room in Marylebone for six years, and before that at restaurants in the Netherlands and New Zealand. Miles’ food concept is the culmination of his extensive travels and experimenting with flavours from all over the world. He takes bold flavours and spices to create dishes with balance and interest. Growing up in New Zealand, Miles also developed a strong passion for coffee. Miles is also Caravan’s head roaster, applying his inherent knowledge of the roasting process, balance of flavours and profiles to develop seasonal espresso blends and source amazing single origin coffees with unique flavour characteristics.
